Satureja hortensis. Half Hardy Annual. Shallow sowing is important. Thin to 30cm apart. Harvest when 15cm high and continue all summer before the small pale mauve flowers appear. Do not allow to flower as the leaves will lose flavour. Take only the tips of the plant and if it flowers cut the whole plant for drying. The delicate flavour resembles a mixture of thyme, mint and marjoram. Used mainly as a seasoning, particularly in Italian cuisine, and fresh sprigs of summer savory can by added to soups, or green beans and peas while cooking. Often added to bean dishes as it helps to prevent flatulence. Tender leaves can be added to summer salads. Ht 20-30cm.
